Balsamic Chicken & Veggies

Ingredients

  • 1 1/2 pound chicken breast
  • 2 tablespoon olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon brown sugar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 clove garlic, minced
  • 2 cup cherry tomatoes
  • 1 red onion
  • 1 cup mozzarella
  • White rice

Instructions

  1. 1.Combine olive oil, balsamic vinegar, brown sugar, oregano, basil, salt, pepper, and garlic in a medium bowl.
  2. 2.Slice several slits width-wise in chicken breasts. Add chicken to the bowl and let marinate for at least an hour.
  3. 3.Preheat oven to 430 degrees.
  4. 4.Add tomatoes and onion to a 9x13 baking pan. Drizzle with olive oil and salt, then mix together.
  5. 5.Put chicken over veggies and pour remaining sauce over. Bake for 25 minutes.
  6. 6.Remove from oven and top chicken with mozzarella. Put back in the oven until cheese is melted.
  7. 7.Serve over rice.
