Balsamic Chicken & Veggies

Ingredients
- 1 1/2 pound chicken breast
- 2 tablespoon olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon brown sugar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 clove garlic, minced
- 2 cup cherry tomatoes
- 1 red onion
- 1 cup mozzarella
- White rice
Instructions
- 1.Combine olive oil, balsamic vinegar, brown sugar, oregano, basil, salt, pepper, and garlic in a medium bowl.
- 2.Slice several slits width-wise in chicken breasts. Add chicken to the bowl and let marinate for at least an hour.
- 3.Preheat oven to 430 degrees.
- 4.Add tomatoes and onion to a 9x13 baking pan. Drizzle with olive oil and salt, then mix together.
- 5.Put chicken over veggies and pour remaining sauce over. Bake for 25 minutes.
- 6.Remove from oven and top chicken with mozzarella. Put back in the oven until cheese is melted.
- 7.Serve over rice.
