Blackened Shrimp Bowls

Ingredients
- 1 pound shrimp
- 1 cup rice
- 1 cup corn
- 1 red bell pepper
- 2 tablespoon cilantro
- 1 lime
- 2 tablespoon olive oil
- 1 avocado
- 1 1/2 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt & pepper to taste
Instructions
- 1.Cook rice according to directions.
- 2.In a large bowl, toss shrimp with cumin, paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
- 3. Heat 1 tbsp of olive oil over medium-high heat and cook shrimp until opaque, about 5 minutes.
- 4.In a medium bowl, combine corn, red bell pepper (chopped), cilantro, 1 tbsp olive oil, juice of 1/2 lime, salt, and pepper.
- 5.To serve, add rice and shrimp to your bowls, then top with corn salsa and slices of avocado. Squeeze remaining lime juice on top.
