Blackened Shrimp Bowls

Ingredients

  • 1 pound shrimp
  • 1 cup rice
  • 1 cup corn
  • 1 red bell pepper
  • 2 tablespoon cilantro
  • 1 lime
  • 2 tablespoon olive oil
  • 1 avocado
  • 1 1/2 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt & pepper to taste

Instructions

  1. 1.Cook rice according to directions.
  2. 2.In a large bowl, toss shrimp with cumin, paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. 3. Heat 1 tbsp of olive oil over medium-high heat and cook shrimp until opaque, about 5 minutes.
  4. 4.In a medium bowl, combine corn, red bell pepper (chopped), cilantro, 1 tbsp olive oil, juice of 1/2 lime, salt, and pepper.
  5. 5.To serve, add rice and shrimp to your bowls, then top with corn salsa and slices of avocado. Squeeze remaining lime juice on top.
