Chicken Larb Bowls

Ingredients
- 1 pound ground chicken
- 1 small shallot, chopped
- 3 tablespoon soy sauce
- 3 tablespoon lime juice
- 1 tablespoon chili paste
- 1/4 cup cilantro, chopped
- 1/4 cup fresh mint, chopped
- 4 green onions
- 1 cucumber
- Rice
Instructions
- 1.Heat a large skillet over high heat and spray with oil. Cook the chicken until no longer pink.
- 2.Add the shallot and cook until softened. Then add the soy sauce, lime juice, and chili paste. Mix in well and cook for a couple minutes to meld the flavors.
- 3.Remove from heat and stir in cilantro, mint, and green onions.
- 4.Serve over rice and top with cucumber slices and additional chili paste if desired.
