Chicken Larb Bowls

  • 1 pound ground chicken
  • 1 small shallot, chopped
  • 3 tablespoon soy sauce
  • 3 tablespoon lime juice
  • 1 tablespoon chili paste
  • 1/4 cup cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 4 green onions
  • 1 cucumber
  • Rice


  1. 1.Heat a large skillet over high heat and spray with oil. Cook the chicken until no longer pink.
  2. 2.Add the shallot and cook until softened. Then add the soy sauce, lime juice, and chili paste. Mix in well and cook for a couple minutes to meld the flavors.
  3. 3.Remove from heat and stir in cilantro, mint, and green onions.
  4. 4.Serve over rice and top with cucumber slices and additional chili paste if desired.
