Cilantro-Feta Stuffed Peppers

Ingredients
- 4 bell peppers
- 1 pound ground turkey
- 1 cup cooked rice
- 1 onion
- 3 clove garlic
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- 1 cup chicken broth
- 1/4 cup fresh parsley, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup feta cheese
- 1/2 cup parmesan cheese
Instructions
- 1.Preheat oven to 400 degrees.
- 2.Cook turkey over medium-high heat. Once brown, add in minced garlic, diced onion, paprika, cumin, & oregano. Cook until onions are soft, 2-3 minutes.
- 3.Drain the mixture and add back to the pan. Add broth, parsley, cilantro, feta, and rice. Let simmer until broth is nearly evaporated/absorbed.
- 4.Chop tops off peppers and empty. Fill each pepper with the meat/rice mixture and top with parmesan. Bake until peppers are soft, about 40 minutes.
