Cilantro-Feta Stuffed Peppers

Ingredients

  • 4 bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 onion
  • 3 clove garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1 cup chicken broth
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup feta cheese
  • 1/2 cup parmesan cheese

Instructions

  1. 1.Preheat oven to 400 degrees.
  2. 2.Cook turkey over medium-high heat. Once brown, add in minced garlic, diced onion, paprika, cumin, & oregano. Cook until onions are soft, 2-3 minutes.
  3. 3.Drain the mixture and add back to the pan. Add broth, parsley, cilantro, feta, and rice. Let simmer until broth is nearly evaporated/absorbed.
  4. 4.Chop tops off peppers and empty. Fill each pepper with the meat/rice mixture and top with parmesan. Bake until peppers are soft, about 40 minutes.
