Cream of Mushroom Chicken

Ingredients
- 1 1/2 pound chicken
- 1 medium onion, chopped
- 1 10.5 oz can condensed cream of mushroom soup
- 2 tablespoon butter
- 1 tablespoon olive oil
- 1/3 cup chicken broth
- 1/2 teaspoon garlic powder
- Salt & pepper to taste
- Chopped parsley, for garnish
Instructions
- 1.Cut chicken in half length-wise & season with salt, pepper, and garlic powder.
- 2.Add olive oil & 1 tbsp butter to a skillet and heat over medium-high. Cook the chicken for 4-5 minutes per side, then transfer to a plate.
- 3.Reduce the heat to medium and add the other tbsp of butter and the onions to the skillet. Cook until onions are lightly browned.
- 4.Add the broth & condensed soup to the skillet and stir until smooth.
- 5.Reduce heat to medium-low and add the chicken back in (with juices from the plate). Cook for another 5 minutes until the chicken is fully done.
- 6.Serve topped with parsley if desired.
