Creamy Feta & Roasted Red Pepper Chicken

Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 4 clove garlic, minced
  • 1/2 pound cauliflower florets
  • 12 ounce jar roasted red peppers, drained
  • 2 pound chicken breasts
  • 1 1/2 teaspoon paprika
  • 1 teaspoon oregano
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 cup chicken broth
  • 1 cup spinach, chopped
  • 3/4 cup feta, crumbled
  • 8 ounce cream cheese
  • 1 lemon, juiced
  • Rice

Instructions

  1. 1.Heat a large pot over medium heat with olive oil. Add onions and garlic and sauté for 3 minutes.
  2. 2.Add cauliflower, red peppers, chicken, seasonings, and broth, ensuring everything is fully submerged. Bring to a simmer & cover. Simmer for 10-15 minutes, until chicken is cooked through.
  3. 3.Shred the chicken and add spinach, feta, cream cheese, and lemon juice. Simmer for 5-10 more minutes to allow liquid to thicken.
  4. 4.Serve over rice.
