Creamy Feta & Roasted Red Pepper Chicken

Ingredients
- 1 tablespoon olive oil
- 1/2 onion, diced
- 4 clove garlic, minced
- 1/2 pound cauliflower florets
- 12 ounce jar roasted red peppers, drained
- 2 pound chicken breasts
- 1 1/2 teaspoon paprika
- 1 teaspoon oregano
- 1 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 2 cup chicken broth
- 1 cup spinach, chopped
- 3/4 cup feta, crumbled
- 8 ounce cream cheese
- 1 lemon, juiced
- Rice
Instructions
- 1.Heat a large pot over medium heat with olive oil. Add onions and garlic and sauté for 3 minutes.
- 2.Add cauliflower, red peppers, chicken, seasonings, and broth, ensuring everything is fully submerged. Bring to a simmer & cover. Simmer for 10-15 minutes, until chicken is cooked through.
- 3.Shred the chicken and add spinach, feta, cream cheese, and lemon juice. Simmer for 5-10 more minutes to allow liquid to thicken.
- 4.Serve over rice.
