1 cup brown rice
1 1/2 cup vegetable stock
2 shallots, finely chopped
1/2 teaspoon salt
3 clove garlic, minced
2 teaspoon thyme
2 tablespoon lemon juice
1/4 cup parmesan, shredded
3 tablespoon olive oil

Add rice, vegetable stock, 2 tbsp olive oil, shallots, and salt to rice cooker and cook.

Heat 1 tbsp olive oil in a pan over medium heat. Add garlic and let cook for a minute, then add thyme and lemon juice. Let cook for another minute.

Add the garlic & lemon juice combo to the rice, along with the parmesan. Mix together.
