Lemon Parmesan Rice

Ingredients

  • 1 cup brown rice
  • 1 1/2 cup vegetable stock
  • 2 shallots, finely chopped
  • 1/2 teaspoon salt
  • 3 clove garlic, minced
  • 2 teaspoon thyme
  • 2 tablespoon lemon juice
  • 1/4 cup parmesan, shredded
  • 3 tablespoon olive oil

Instructions

  1. 1.Add rice, vegetable stock, 2 tbsp olive oil, shallots, and salt to rice cooker and cook.
  2. 2.Heat 1 tbsp olive oil in a pan over medium heat. Add garlic and let cook for a minute, then add thyme and lemon juice. Let cook for another minute.
  3. 3.Add the garlic & lemon juice combo to the rice, along with the parmesan. Mix together.
