Lemon Parmesan Rice

Ingredients
- 1 cup brown rice
- 1 1/2 cup vegetable stock
- 2 shallots, finely chopped
- 1/2 teaspoon salt
- 3 clove garlic, minced
- 2 teaspoon thyme
- 2 tablespoon lemon juice
- 1/4 cup parmesan, shredded
- 3 tablespoon olive oil
Instructions
- 1.Add rice, vegetable stock, 2 tbsp olive oil, shallots, and salt to rice cooker and cook.
- 2.Heat 1 tbsp olive oil in a pan over medium heat. Add garlic and let cook for a minute, then add thyme and lemon juice. Let cook for another minute.
- 3.Add the garlic & lemon juice combo to the rice, along with the parmesan. Mix together.
