Mashed Potatoes
A healthier take on mashed potatoes.

4 lbs Yukon gold potatoes, chunked
8 cloves Garlic, halved
2 1/2 tsp Salt
8 oz Sour cream
1 cup Vegetable broth
2 tbsp Butter
1 tsp Pepper
Fresh parsley, chopped

Chop the potatoes into 2" chunks. Try to keep the chunks evenly-sized so they cook at the same rate.

Add potatoes, garlic, and 2 tsps of salt into a large pot and cover with 1" of water. Bring to a boil and cook for 10-15 minutes, until tender. Drain and add back to the pot.

Add the sour cream, broth, butter, remaining 1/2 tsp salt, and pepper to the pot. Mix & mash until you reach your desired consistency.

Top with parsley and enjoy!
