2 lbs Ground beef
1 Onion, chopped
1 tsp Olive oil
2 Eggs
5 cloves Garlic, minced
2 tbsp Ketchup
3 tbsp Fresh parsley, chopped
3 /4 cup Panko breadcrumbs
1 /3 cup Milk
1 tsp Salt
1 tsp Italian seasoning
1 /2 tsp Pepper

1 1/2 tsp Vinegar
2 tbsp Brown sugar
1 /2 tsp Garlic powder
1 /2 tsp Onion powder

Line a baking sheet with parchment paper and preheat oven to 350 degrees.

Add oil to a pan over medium heat. Sauté onions until golden, about 5 minutes.

In a large bowl, add all the meatloaf ingredients and mix until just combined. Be careful not to over mix - that can cause your meatloaf to become overly dense!

Shape the loaf on your prepared baking sheet. Bake, uncovered, for about 40 minutes.

While the loaf is baking, make your sauce by mixing all sauce ingredients in a small bowl.

After the 40 minutes are up, spread the sauce on top of the meatloaf. Return to the oven for another 20 minutes, until cooked through (160 degrees internal). Rest the loaf for 10-15 minutes before serving.
Tips
You can mix in different meats - I like going with half beef, half turkey for a leaner option.
