Ropa Vieja

Ingredients

  • 2 pound chuck beef
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 8 clove garlic, minced
  • 2 teaspoon oregano
  • 2 teaspoon ground cumin
  • 2 teaspoon sweet paprika
  • 1 teaspoon smoked paprika
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 2 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1 cup beef broth
  • 1 16 oz can crushed tomatoes
  • 6 ounce tomato paste
  • 2 bay leaves
  • 1/3 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • Rice

Instructions

  1. 1.Heat oil over high heat in a large skillet. Brown the meat on all sides until a nice crust has formed.
  2. 2.Transfer the meat to a crockpot. Pour in the broth and add the onion and bell peppers. Then, add the crushed tomatoes and tomato paste, followed by the garlic and spices. Stir everything until well blended.
  3. 3.Add the bay leaves, then cover and cook on low for 8 hours.
  4. 4.Once cooked, remove the bay leaves and shred the beef. Add the parsley, give a quick stir, and it's ready to serve over rice!
