Ropa Vieja

Ingredients
- 2 pound chuck beef
- 1 onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 8 clove garlic, minced
- 2 teaspoon oregano
- 2 teaspoon ground cumin
- 2 teaspoon sweet paprika
- 1 teaspoon smoked paprika
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground cloves
- 2 teaspoon salt
- 1/2 teaspoon black pepper, freshly ground
- 1 cup beef broth
- 1 16 oz can crushed tomatoes
- 6 ounce tomato paste
- 2 bay leaves
- 1/3 cup fresh parsley, chopped
- 1 tablespoon olive oil
- Rice
Instructions
- 1.Heat oil over high heat in a large skillet. Brown the meat on all sides until a nice crust has formed.
- 2.Transfer the meat to a crockpot. Pour in the broth and add the onion and bell peppers. Then, add the crushed tomatoes and tomato paste, followed by the garlic and spices. Stir everything until well blended.
- 3.Add the bay leaves, then cover and cook on low for 8 hours.
- 4.Once cooked, remove the bay leaves and shred the beef. Add the parsley, give a quick stir, and it's ready to serve over rice!
