Salmon Sushi Bake

Ingredients

  • 1 pound salmon
  • 3 tablespoon teriyaki sauce
  • 1 tablespoon brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 3 cup rice
  • 1 avocado, cubed
  • 3 tablespoon spicy mayo
  • 1 tablespoon furikake (optional, but adds a lot)
  • 2 tablespoon crispy fried onion bits
  • 2 tablespoon green onions, diced

Instructions

  1. 1.Remove skin from salmon and cut into cubes.
  2. 2.Combine salmon, teriyaki, and salt in a bowl. Set aside to allow it to marinate for 10-15 minutes.
  3. 3.In a baking dish, add the rice and pat down to create a flat base. Top with the salmon (and sauce!), then spread garlic powder and brown sugar evenly over the top.
  4. 4.Turn on broiler and cook on the top rack for 6-10 minutes, until the salmon is flaky.
  5. 5.Top with avocado, mayo, furikake, fried onions, and green onions.
