Sheet Pan Fajitas

Ingredients

  • 2 pound chicken breast
  • 1 red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 lime
  • 1 tablespoon olive oil
  • 1/2 tablespoon chili powder
  • 1/2 tablespoon salt
  • 1/2 tablespoon smoked paprika
  • 1/2 tablespoon ground cumin
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon oregano
  • 1/4 tablespoon pepper
  • Cilantro to taste

Instructions

  1. 1.In a large bowl, create the marinade using all seasonings, olive oil, and lime juice.
  2. 2.Thinly slice the chicken, onion, and bell peppers. Add all to the marinade and let sit for at least an hour in the fridge.
  3. 3.Preheat oven to 375 degrees. Spread the chicken & veggie mixture onto a rimmed baking sheet and cook for 15-20 minutes.
  4. 4.Turn oven to broil to get some char on the veggies, about 3 minutes.
