Cut your chicken breasts in half so you have 4 pieces, then pound each to even thickness - about 1/2 inch each.

In a medium bowl, whisk buttermilk, salt, and pepper together. Add the chicken and fully coat. Let marinate for at least 1 hour.

In a large bowl, whisk together the vinegar, olive oil, mustard, salt, and pepper. Add the rest of the slaw ingredients and toss to combine.
Cooking the Chicken

Preheat your air fryer to 375 degrees.

In a shallow bowl, combine panko, cayenne, salt, and pepper. Dredge the chicken in the panko, shaking off any excess.

Put your chicken in the air fryer and spray the tops with oil. Cook for about 15 minutes, flipping halfway through - spray the tops with oil again when you flip.
